DARK CHOCOLATE SUPERFOOD BARK

When choosing a chocolate bar or chocolate chips, always look for at least 70% cacao and no soy lecithin! The antioxidants in cacao exceed red wine and even green tea. Cacao is high in magnesium, which can help to lower blood pressure and relax muscles. This homemade dark chocolate bark is free of all the additives in commercial peppermint barks or other holiday treats. This simple recipe can be made with a number of different toppings like sea salt and coconut flakes, crushed organic candy canes or even dried lavender or rose petals! This is a great option to take to a holiday party or can be packed in ball jars as a hostess gift!
INGREDIENTS
1 10 oz bag dark chocolate chips
1/4 cup pistachios, shelled and chopped coarsely
1/8 cup goji berries
DIRECTIONS
Melt the dark chocolate in a double boiler, stirring occasionally. Line a baking sheet with parchment paper. Once the chocolate is completely melted and shiny, carefully remove from heat and pour over parchment paper. Spread with a wooden spoon until 1/8-1/4 inch thick. Sprinkle with pistachios and goji berries. Place in fridge about 3 hours or until completely hardened, then break into one inch pieces. Store in a glass container in fridge until ready to use.
