Cranberry Sauce with Orange Zest
CRANBERRY SAUCE WITH ORANGE ZEST
FOOD AS MEDICINE:
Cranberries are well known for their effectiveness in treating urinary tract infections because they contain high levels of proanthocyadinins that inhibits bacteria from attaching to the bladder and urethra. Cranberries are also an excellent source of Vitamin C and are one of the top antioxidant rich foods. The polyphenols in cranberries may also reduce the risk of cardiovascular disease and certain types of cancer.
INGREDIENTS:
1 Tbsp organic coconut oil
2 cups fresh organic cranberries
2 sticks cinnamon + 2 tsp ground
Juice of Meyer lemon
Juice of satsuma + zest (can use an orange)
2 Tbsp raw unfiltered wild honey
DIRECTIONS:
- Heat a small saucepan over medium heat, add coconut oil. Place cranberries, cinnamon, lemon and orange juice into pan and cover with the lid.
- Simmer until cranberries begin to “pop”. Stir in honey and break down cranberries further into a sauce consistency with back of a spoon.
Makes about 8 ¼ cup servings
