Zesty Grain Free Lemon Bars
ZESTY GRAIN FREE LEMON BARS
FOOD AS MEDICINE:
Lemons provide over 100% of your daily vitamin C requirements. Known for their high anti-oxidant content, lemons help fight free radicals in the body and protect your vessels. Lemons are also a good source of thiamin, riboflavin, pantothenic acid, iron, calcium, and more! They are also very low in fructose, which can cause additional metabolic complications.
INGREDIENTS:
For the crust:
1 cup Hazelnut flour
1/3 cup coconut flour
½ tsp baking soda
2 Tbs coconut oil, plus more for greasing dish
2 tsp honey
2 eggs
1 Tbsp fresh lemon juice
For the filling:
3 large eggs plus 1 yolk, lightly beaten
1/3 cup wild unfiltered honey
1/2 cup fresh lemon juice, strained
1/4 cup coconut milk, full fat, stirred
3 Tbs coconut flour
2 Tbsp coconut oil, melted
1 Tbsp lemon zest, finely grated
DIRECTIONS:
Preheat oven to 350 degrees F. Combine all of the crust ingredients in a food processor. Process for 30 seconds, stopping halfway through to scrape the sides. Continue to pulse until a dough-like texture forms. Lightly grease a 9×9 square baking dish with coconut oil. Press the crust into the bottom and slightly up the sides of the dish and bake for 10-12 minutes.
Begin to prepare the filling. Place an oven-safe dish filled with water on lower rack in the oven, this helps to prevent cracking in the filling layer by creating steam. Whisk together all of the filling ingredients. Pour the filling on top of the baked crust, and bake again for 15-20 minutes or until the center is set but slightly jiggly. Allow to cool, then refrigerate until firm.
