MATCHA SESAME ENERGY BALLZ

Matcha is a powdered form of a Japanese green tea that is grown in shade to increase certain properties and make the taste more smooth with a less astringent aftertaste. Matcha is a ground powder of the entire leaf of tea which is consumed whole rather than steeping the leaf and discarding, which allows for about 10 times the nutritional boost. The use of shade in the growing process increases production of caffeine and l-theanine, a natural mood stabilizer. Matcha can be a therapeutic intervention for depression, anxiety and adrenal fatigue as well as diabetes, heart disease, cancer and beyond. These quick energy bites provide healthy fats and can be easily adapted into a fat bomb snack for those following a ketogenic protocol.
INGREDIENTS
1 cup coconut butter
1 cup tahini
2 Tbsp raw local honey (optional, omit for keto-friendly!)
2 tsp matcha powder or 2 scoops Vital Proteins Matcha Collagen
1 tsp vanilla extract
Generous pinch sea salt
Black or white sesame seeds for rolling
Coconut flakes for rolling
DIRECTIONS
Place all ingredients in a food processor aside from the sesame seeds and coconut flakes. Process until thoroughly combined. If mixture is liquid-y, place in freezer for 20-30 minutes until hardened but scoopable. Scoop into tablespoon sized balls and roll between the palms of hands, then roll in the coconut or sesame seeds. Place in an airtight container in the freezer to store.
