Thai Lettuce Wraps
THAI LETTUCE WRAPS
FOOD AS MEDICINE
Adding fresh herbs to meals is a great way to contribute flavor with increased nutrients for a balanced diet! Simple flavors allow for a true appreciation for the bounty of the season. Fresh herbs are also very nutrient dense and can add antioxidant and detoxification support to any meal! These lettuce wraps are a flavor-packed weeknight meal that can be made with ground pork, beef, chicken or turkey.
INGREDIENTS
1 Tbsp coconut oil
4 shallots, minced
2 cloves garlic, minced
1/2 cup scallions (white part), minced
1-2 serrano peppers, minced
1 pound ground pork
1 tsp sea salt
1 Tbsp coconut aminos
2 tsp fish sauce
juice of one lime
1/2 bunch each basil, mint and cilantro, minced
1/2 cup scallions, green, chopped
1/4 cup cashews, toasted, for serving
Butter or green leaf lettuce for serving
DIRECTIONS
Heat the coconut oil in a large skillet over medium heat. Add the shallots, garlic, scallions, serrano peppers and a pinch of sea salt and sautee, stirring until shallots begin to brown. Add in the ground pork and another generois pinch sea salt. Cook, breaking up with a wooden spoon, until the pork is cooked through and browned. Add in the coconut aminos and fish sauce and cook 1-2 additional minutes. Turn off the heat and allow to cool slightly, then add the lime juice, herbs, scallions and cashews, reserving a small amount for garnish. Stir to combine. Serve in lettuce cups and sprinkle with herbs, cashews and a squeeze of lime.
