Creamy Cauliflower Chowder Recipe
CREAMY CAULIFLOWER CHOWDER RECIPE
FOOD AS MEDICINE:
Cauliflower is low in calories and carbohydrates and is nutrient dense, making it a great base for soups, purees, and mashes. Cauliflower contains powerful sulfur compounds that have the ability to protect against cancer and detoxify the body. This vegetable also has high amounts of vitamins C and K, folate, choline, and fiber. For added nutritional value, combine bone broth and cauliflower. The combination helps repair the gut lining, reduce toxic compounds in the bloodstream, and support the detox process.
For the cold winter days, warm your body and soul with our Creamy Cauliflower Chowder recipe.
INGREDIENTS:
4 slices pasture raised bacon, crumbled
2 tablespoons grassfed butter
2 cloves garlic, minced
1 cup leeks, finely chopped, green parts reserved for bone broth
2 carrots, diced
2 stalks celery, diced
1 head cauliflower, chopped into small florets
3 sprigs thyme
1 bay leaf
½ teaspoon ground cumin
¼ teaspoon ground coriander
6 cups bone broth
1 cup coconut milk
Sea salt to taste
Black pepper to taste
2 tablespoons parsley, chopped
2 green onions, thinly sliced
DIRECTIONS:
In a large skillet, cook the bacon until crispy. Set aside on a paper towel lined plate. Melt the butter in a large stockpot. Add garlic, leeks, carrot, celery, and a generous pinch of sea salt. Cook until tender and leeks are translucent. Add the cumin, coriander, thyme, and the bay leaf and cook until fragrant. Add in the cauliflower florets and cook until tender. Add in the bone broth. Bring to a boil, reduce the heat, and simmer 15-20 minutes with the lid off.
When the cauliflower is tender, add in the coconut milk and season to taste with salt and pepper. Cook 3-5 minutes longer, then remove from heat. Garnish with chopped bacon, parsley, and green onions. Sprinkle with black pepper.
Note: Cooking with the lid off allows the noxious gas to escape, reducing gas and bloating and helps eliminate the smell of sulfur.
