ASSEMBLING THE PERFECT CHEESE BOARD

If you’re hosting at all this holiday season, assembling a cheese board is a much needed skill that can pull any party together from a cocktail soiree to a formal dinner party to a ladies wine night. Choose at least one hard and one soft cheese to build your cheese plate around and depending on how many guests you expect plan for 1-2 oz of cheese per person. Hit up your local cheesemonger or the cheese counter at your favorite natural foods store for suggestions of pairings and aim to please a variety of palates. Pick a couple items from each of the below categories depending on the size of your crowd, stick a cheese knife in each different cheese, pop open a couple bottles of wine and voila, party time!
INGREDIENTS
Choose 1-3 hard cheeses: smoked gouda, raw aged cheddar, Manchego, Comte
Choose 1-3 soft cheeses: truffled goat cheese, brie, blue cheese
Choose 1-3 uncured pasture-raised meats or proteins: prosciutto, salami, coppa, pate, smoked salmon
