Baked Eggs in Avocado
BAKED EGGS IN AVOCADO
FOOD AS MEDICINE:
Eggs are a nutritionally dense food, providing about 7 grams of protein each, as well as choline for brain development and omega-3’s for heart health. Eggs are also high in sulfur, which supports detoxification as well as cysteine and Vitamin D. Avocados are a great source of B vitamins and fatty acids that aid to manage stress response and reduce excess cortisol. This is a great snack to curb cravings and aid in managing mood. Add an extra slice of bacon or an extra egg to meet your protein requirements at breakfast!
INGREDIENTS:
1 ripe avocado, halved and pitted
2 pasture raised eggs
2 slices pasture raised bacon
2 Tablespoons chives, chopped
DIRECTIONS:
Preheat the oven to 400 F.
Scoop out enough of the avocado flesh to allow an egg to fit, about 2 Tablespoons.
Place the avocado halves in a small baking dish. Crack an egg into each half. Place in the oven and bake for 15 to 20 minutes.
In the meantime, cook the bacon slices until crispy. Drain on paper towels, then crumble into small pieces.
When the egg whites are set, take the avocado halves out of the oven. Top with the bacon and chives.
