BERRY ZESTY BOOST BITES

Cashews, macadamia nuts, brazil nuts and pecans are a great source of healthy fats paired with protein and a moderate dose of carbs. Nuts are correlated with increased life expectancy and this may be due to their content of monounsaturated fats which improve vessel health and arginine which aids in dilating blood vessels decreasing blood pressure. They also provide a rich source of fat soluble antioxidants which aid in fighting against cancer and cognitive decline! Pop these in the freezer for a cool treat and for best shelf life!
INGREDIENTS
1/2 cup of macadamia nuts
1/2 cup brazil nuts
1/4 cup cashew butter
1/2 tsp fine sea salt
1/3 cup of wild local, raw unfiltered honey
4 Tbsp lemon zest (zest of 3 lemons)
1 Tbsp lemon juice (juice of 1-2 lemons)
1 tsp vanilla
1 cup pecans
1/2 cup raw cashews
1/3 cup dried blueberries
coconut shreds for rolling
Note: if looking to bump up the protein of this recipe, you can add 3-4 scoops Naturally Nourished Grassfed Whey during blending, just be aware you may need to compensate with additional liquid or nut butter!
DIRECTIONS
Combine macadamia nuts, brazil nuts, pecans and cashews in a food processor until coarsely ground into a nut flour. Add sea salt and pulse until well mixed. In a small bowl whisk lemon zest, lemon juice, vanilla and honey. Add the liquid to the mixture in the food processor and pulse until well blended. Add cashew butter and blend until smooth. Add cashew and pecans and pulse until mixed but still having texture. Then pulse in blueberries. Scoop into tablespoon sized mounds and roll in coconut shreds.
