BISON GINGER STIR-FRY
INGREDIENTS:
2 Tbsp lower-sodium tamari (gluten-free soy sauce)
2 tsp sucanat (unrefined cane sugar)
1 tsp arrowroot (natural thickener as opposed to processed corn starch)
1 Tbsp dry sherry
2 tsp hoisin sauce
1 Tbsp rice vinegar
1 Tbsp chile paste with garlic
2 Tbsp sesame oil
2 Tbsp peanut oil, divided
2 Tbsp minced peeled fresh ginger
1 Tbsp minced fresh garlic
1 pound sirloin steak, thinly sliced across the grain
1 bunch medium green onions, sliced thinly
2 bell peppers, chopped into 2” pieces
5 carrots, sliced into “coins”
Snap peas, sliced thinly
Broccolini, chopped in 1-2” pieces
DIRECTIONS:
Combine first 8 ingredients, stirring until smooth. Heat 1 Tbsp peanut oil in a large nonstick skillet over medium-high heat. Add minced ginger, minced garlic, and beef/bison; sauté for 2 minutes or until meat is browned. Add green onion pieces; sauté 30 seconds. Add sauce mixture; cook 1 minute or until thickened, stirring constantly.
Remove meat and add remaining peanut oil in wok. Stir fry bell pepper, carrots, snap peas, and broccolini. Serve with beef sliced on top, drizzle dish with extra pan sauce.
