Blackberry Lime Coconut Milk Popsicles
BLACKBERRY LIME COCONUT MILK POPSICLES

Citrus zest can be a great source of nutrients on a low carb diet as it is packed with immune boosting vitamin C and antioxidants. It also provides potassium to help keep blood pressure in check and limonene, a phytochemical that may have anti-cancer effects. Using the zest of lemons, limes and oranges can add flavor and nutrient punch to salad dressings, smoothies and more without breaking the carbohydrate bank!
INGREDIENTS
Zest of 1 lime
Juice of 2 limes
2 cups full fat coconut milk
1 tsp vanilla extract
2 cups blackberries
2 Tbsp basil, finely chopped
DIRECTIONS
Place the lime zest and juice, coconut milk and vanilla in a blender and blend until combined. Place the blackberries and basil in a bowl and mash with a fork until berries have burst and broken down. Spoon a couple tablespoons of the berry mixture into 6 popsicle molds, then pour coconut milk to halfway full. Carefully add another couple tablespoons berries to each mold, then fill to the top with coconut milk mixture. Freeze 6 hours or overnight.
