Blueberry Banana Baked Oatmeal Recipe
BLUEBERRY BANANA BAKED OATMEAL RECIPE

This baked oatmeal is an easy make-ahead breakfast and is sure to be a crowd-pleaser at any brunch gathering. The soluble fiber from the oats helps to prevent blood sugar spikes and increase satiety, while also working to lower cholesterol as effectively as statin drugs. The almonds contain plant sterols which can also help to lower cholesterol, as well as vitamin E to support heart health. They whey protein supports lean body mass and also increases satiety, making this a breakfast that will stick with you all morning! We recommend pairing a serving with a hard boiled egg to get the minimum 15g of protein at breakfast to support lean body mass. The blueberries are rich in the antioxidant anthocyanin, which protect blood vessels and help to regulate blood flow.
INGREDIENTS:
2 cups rolled oats
1 scoop Naturally Nourished Grassfed Whey Protein Powder
½ cup sliced almonds, plus 2 T for sprinkling
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon sea salt
1 cup coconut milk
1 large egg
2 Tablespoons grass fed butter, melted
2 teaspoons vanilla extract
1/3 cup maple syrup
2 bananas, sliced thinly
1 ½ cups blueberries, frozen or fresh
DIRECTIONS:
Preheat the oven to 375 degrees. Butter the inside of an 8-inch square baking dish. Mix together the oats, whey protein powder, sliced almonds, baking powder, cinnamon and sea salt. In a separate bowl, whisk together the coconut milk, egg, butter, vanilla and maple syrup until combined. Spread the banana slices in a single layer in the baking dish. Sprinkle one cup of the berries on top of the bananas, reserving the other half. Cover the berries with the oat mixture, then pour the coconut milk on top. Wiggle the baking dish so that the milk mixture gets all the way down to the bottom. Sprinkle the remaining cup of berries and sliced almonds over the top. Bake 30-35 minutes, until golden brown and the center is no longer jiggly.
