Blueberry Banana Muffins

It seems like everyone is making banana bread these days and while that is all well and good, these Banana Blueberry Muffins bake in half the time! Stella and I love the ritual of baking a grain-free treat together once a week and these muffins are so simple that I can picture her memorizing the recipe and mastering it on her own within the next year! This is a great one for kiddos to take ownership of and make for Mother’s Day brunch, with or without a little help. The sweetness of these muffins comes from mashed banana, providing texture and flavor along with potassium, B6 and prebiotic fiber to support gut health. Even with the banana and added blueberries for antioxidant punch, this recipe has 6g total carbs per muffin and can still fit within a real food keto approach!
INGREDIENTS:
1 cup mashed banana
1/3 cup melted ghee
3 large eggs
2 tsp vanilla extract
2 tsp cinnamon
1 tsp baking soda
1.5 cups almond flour
1/2 c blueberries
DIRECTIONS:
Preheat the oven to 350 degrees. Combine the mashed banana, ghee, eggs and vanilla in a medium bowl and whisk until incorporated. In a separate bowl, combine cinnamon, baking soda and almond flour. Slowly add the wet ingredients to the dry, mixing with a wooden spoon. Once incorporated, gently fold in the blueberries. Spoon the batter into muffin tins lined with parchment paper muffin liners. Bake 25-27 min or until a knife inserted in one of the muffins comes out clean. Allow to cool before serving with grassfed butter.
