Blueberry Lemon Muffins

These blueberry lemon muffins are an amazing low carb option whether hosting a spring brunch or for packing nutrient density into lunchboxes for picky eaters! Whenever I have houseguests I make a batch of nut flour muffins and keep them on the counter to try to fit different eating schedules and time zones and avoid hangry friends and family members–they are always gone by the end of their visit and if not, I pack them up as snacks for the plane. These muffins use a base of nut flour and coconut oil to keep macros dominant in fat and each muffin comes in at 10g of total carbs (6 grams net) which can easily fit into your macros for a keto or low carb approach. We recommend keeping even real food sweeteners out in the transitional phase of keto but once fat adapted at 8+ weeks these are an awesome tool that feels like a treat! We added our favorite collagen peptides from Further Food Collagen to ramp up the protein content and provide support for the gut lining as well as hair, skin, nails and joints! The lemon juice and zest provides Vitamin C for antioxidant and adrenal support while the blueberries provide anthocyanins to reduce DNA damage and guard against cancer, heart disease and beyond!
INGREDIENTS
2 cups almond flour
1/4 cup coconut flour
2 Tbsp collagen peptides
1/2 tsp baking soda
1/2 tsp sea salt
2 pasture-raised eggs
1/8 cup raw local honey
1/4 cup coconut oil, melted
1 tsp almond extract
zest and juice of 2 lemons (about 1/4 cup juice and 2 Tbsp zest)
1 cup fresh blueberries
DIRECTIONS
Preheat the oven to 350 and line a muffin tray with parchment liners. Combine almond flour, coconut flour, collagen, baking soda and salt in a large bowl. In a separate bowl, whisk together the eggs, honey, coconut oil, almond extract and lemon juice and zest. Add the wet ingredients into the dry and stir until well combined. Fold in the fresh blueberries. Scoopt evenly into 12 muffin tins and bake for 25-30 minutes, until golden brown and a knife inserted in one of the muffins comes out clean. Slather with coconut butter or ghee to serve!
