CARIBBEAN QUINOA STIR FRY
INGREDIENTS:
1 cup Quinoa
2 cups chicken bone broth
1 tbsp butter
½ tsp Turmeric
1 Garlic Clove
½ cup chopped red Onion
1 cup chopped Red Bell peppers
½ cup Raisins
1 Orange -juice & zest
2 tbsp Raw Honey
1 bunch Swiss chard
1 tbsp Cilantro
1 tsp Salt
1 tsp Pepper
DIRECTIONS:
In large pot bring to a boil 2 cups of chicken bone broth. Use a mesh strainer to rinse the quinoa before adding to the pot of boiling broth. Add in turmeric, cilantro stems, or desired herbs for additional flavor. Cook until outside germ is separated creating a clear (yellow) ring around the outside of the seed and remove from heat and set aside. In large skillet sautee onion, garlic, swiss chard stems and peppers until tender. Remove from heat and add in cooked quinoa and chicken to skillet. Stir in orange juice and zest, honey, and salt and pepper. Fold in swiss chard leaves and raisins and garnish with cilantro if desired. Serve with 4 oz chicken or fish.
