Cast Iron Cheesy Cauliflower Bake

This cheesy cauliflower bake has comfort food written all over it while incorporating a potent dose of detox supporting compounds. The I3C compound in cruciferous and sulfur-containing veggies such as cauliflower has been found to prevent cancer and inhibit the growth of tumors in the body. Cauliflower also contains active compounds needed for both phase 1 and phase 2 detox activities as well as glucosinates that help to activate enzymes needed for detoxification. INGREDIENTS
1 head cauliflower, chopped into florets
1 tbsp grassfed butter
½ yellow onion
1 tsp salt
2 cloves garlic
3 cups spinach, chopped
1/2 cup bone broth
2 cups cheddar cheese, shredded
½ cup parmesan cheese, shredded
DIRECTIONS
Preheat the oven to 400. Steam cauliflower for 8 minutes. In the meantime, melt the butter in a large cast iron pan over medium heat. Once melted, add the onion and a pinch of sea salt. Cook, stirring occasionally, until onions are translucent and beginning to brown, about 5-6 minutes. Add the garlic and stir to coat. Add the spinach and stir, then cook, stirring occasionally, until fully wilted. Add in the steamed cauliflower along with the bone broth and most of the cheddar cheese, reserving about 1/2 cup. Stir to mix and turn off the heat. Sprinkle the remaining 1/2 cup cheddar and all of the parmesan over the top. Place in the oven and bake 15-20 minutes, until the cheese is fully melted and bubbling.
