CHOCOLATE COVERED BACON HEARTS

Makes 8 hearts
INGREDIENTS:
8 slices pasture raised bacon
8 oz dark chocolate (70% cacao or higher)
DIRECTIONS:
Preheat the oven to 350 degrees. Cut each slice of bacon in half. Overlap two half slices into a heart shape and place on a sheet pan. Bake the bacon for 15-20 minutes or until crispy. Place the hearts on paper towels to drain.
In the meantime, create a double boiler using a small saucepan and a heat-proof bowl. Fill the saucepan with water until it just touches the bottom of the bowl. Once the water begins to simmer, add the chocolate and melt, stirring occasionally, until evenly melted and shiny. Carefully dip half of each heart in the chocolate. Allow to dry on parchment paper before serving or storing in a glass container in the fridge.
