Chocolate Peanut Butter Gelatin Pudding
FOOD AS MEDICINE:
Gelatin is comprised of glycine and proline, two amino acids that are generally limited in the American diet as they are found abundant in organs, bones, and fibrous animal tissues not commonly consumed in our modern diet. These amino acids contribute to healthy skin and promote collagen formation as well as hair and nail strength. Gelatin can be therapeutic for bone and joint support, showing promising research and outcomes superior to Glucosamine supplements. Its main claim to fame is the ability to line the gut and reduce inflammation caused by food allergies or inflammatory bowel disease. Gelatin has mucilaginous (aka “oopy-goopy”) compounds that reline the gut essentially serving as a “face-lift” for the GI tract and fuel the gut cells! Beyond these benefits there is some compelling research that it may reduce cellulite and boost weight loss! With all these benefits, break out the Gelatin (Grassfed sources only, not your standard confined animal farm sourcing found in Jello or Knox) and get in the kitchen!
INGREDIENTS:
1 can full fat coconut milk
3 Tbsp raw cacao powder
1-2 Tbsp robust maple (optional, omit for keto-friendly)
2 Tbsp peanut butter (fresh ground, only ingredient organic peanuts)
1 tsp vanilla
DIRECTIONS:
Blend all ingredients until smooth and well combined. Then let rest in blender for 5 minutes to allow gelatin to bloom. After 5 minutes blend on high for 1 minute and distribute into ramekins. Place in fridge to set for 3-4 hours. Enjoy!

I just made this, finally. It’s delicious. I think next time I will cut the honey to only 1T and add a couple T of shredded coconut.

Is the vital proteins gelatin different then the vital proteins collagen? Or will it do the same thing?
Collagen and gelatin are different–collagen can work in hot or cold beverages and recipes. Gelatin should be used in hot beverages (that will be consumed still hot) OR in gelatin type recipes like gigglers, puddings etc as it will harden (think jello texture)
could you use almond or cashew butter instead of the peanut butter?
