Cilantro Lime Cauliflower Rice
CILANTRO LIME CAULIFLOWER RICE

Cauliflower rice is a tried and true keto staple but can get a little boring with just salt and pepper! Adding citrus zest to your keto recipes is a great way to reap the immune boosting benefits of Vitamin C and antioxidants going into the fall and winter months. It also provides potassium to help keep blood pressure in check and limonene, a phytochemical that may have anti-cancer effects. Using the zest of lemons, limes and oranges can add flavor and nutrient punch to salad dressings, smoothies and more without breaking the carbohydrate bank! This rice is an awesome side for our Pumpkin Bison Chili or can be a great vessel for a couple of fried eggs!
INGREDIENTS
1 head cauliflower, pulsed in food processor into rice
1 Tbsp avocado oil
2 cloves garlic, minced
Zest and juice of 2 limes
4 green onions, finely chopped
1/2 bunch cilantro, finely chopped
sea salt + black pepper to taste
DIRECTIONS
Heat a large cast iron over medium heat and add the cauliflower rice. Toast dry, stirring occasionally, until rice begins to brown. This step helps to prevent a mushy end product! Add the avocado oil and sauté, stirring, about 5-6 minutes. Add the garlic and continue to cook another 2-3 minutes until cauliflower rice crispy in parts. Remove from heat and fold in the lime juice and zest, green onions and cilantro and season to taste with salt and pepper.
