Coconut Milk Ice Cream Recipe
COCONUT MILK ICE CREAM RECIPE
FOOD AS MEDICINE:
This creamy, dairy-free ice cream satisfies your sweet tooth while providing beneficial fats. Coconut milk contains medium-chain triglycerides (MCT), which work to tonify the adrenal glands, aid in sleep regulation, reduce stress as well as boost metabolism. While saturated fat once got a bad rap, we are now learning that eating this type of fat can aid in weight loss and appetite regulation and even be heart protective! Coconut milk also contains lauric and capric acids, which have antibacterial, antifungal and antiviral properties. This ice cream is sweetened with a small amount of honey as well as berries of your choice–as berries are low glycemic. You can opt to leave out the honey if you are avoiding sweeteners!
Makes 4 servings
INGREDIENTS:
1 can full-fat coconut milk (we like Native Forest brand, which is BPA-free), chilled
1 vanilla bean, scraped (or 1 teaspoon vanilla extract)
1 Tablespoon honey
1 cup frozen berries of your choice
DIRECTIONS:
Place the coconut milk, vanilla and honey in the blender and blend until smooth. Note: The colder these ingredients are to start, the faster this will freeze. Fold in the berries. If you prefer a smooth and creamy ice cream, you can blend the berries as well. Pour into a freezer safe container and freeze 4-6 hours until solid, stirring occasionally to break up ice crystals. Alternatively, place in an ice cream maker and freeze according to manufacturer’s directions.
