Crunchy Spiced Chickpeas Recipe
CRUNCHY SPICED CHICKPEAS RECIPE

Chickpeas, also known as garbanzo beans, are an excellent source of soluble fiber and aids in lowering cholesterol. Although chickpeas are a carbohydrate, they’re also a great source of protein. The combination of protein and fiber increases satiety, while stabilizing blood sugar. Chickpeas also contain high levels of choline and selenium, which reduce inflammation in the body and aid in thyroid function.

Makes 4 servings
INGREDIENTS:
One 15 oz can garbanzo beans, rinsed (I recommend the Eden brand, which have been soaked with kombu for improved digestibility and mineral content)
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon paprika
Pinch cayenne pepper
Pinch sea salt
DIRECTIONS:
Preheat the oven to 400 degrees. After rinsing chickpeas, allow to dry thoroughly on paper towels. Toss in bowl along with olive oil, cumin, paprika, cayenne, and sea salt. Mix until chickpeas are thoroughly coated and season to taste. Spread out on a sheet pan and bake for 25-30 minutes, until crunchy.
