Easy Tzatziki Sauce
EASY TZATZIKI SAUCE

Studies have shown eating foods rich in probiotics can lead to an improved immune response by increasing the body’s white blood cell count. Greek Yogurt is also a protein powerhouse, with at least 15g in a 6oz serving! This sauce makes a great dip for raw vegetables and is amazing with lamb chops, burgers or chicken thighs!
INGREDIENTS
1 medium cucumber, peeled and grated or finely chopped
1 cup full fat Greek yogurt
2 cloves garlic, minced
1 Tbsp lemon juice
2 Tbsp fresh dill, finely chopped
2 Tbsp fresh mint, finely chopped
2 Tbsp olive oil
sea salt and black pepper to taste
DIRECTIONS
Place the grated cucumber in a mesh strainer and sprinkle with sea salt. Allow to drain about 15-20 minutes, then press with the back of a spoon to remove remaining moisture. In a medium bowl, combine the yogurt, garlic, lemon, herbs and olive oil. Fold in the cucumber. Add a few tablespoons filtered water to thin to desired consistency. Season to taste with salt and pepper and serve with crudite, over lamb chops or as a condiment for lamb burgers!
Makes 8 servings of 2 Tbsp each
