Cholesterol does play a role in plaque formation, but only after an injury has occurred in the lining of the vessel. Think of it this way: blaming cholesterol for heart disease is like blaming a firefighter for the cause of a fire. Get a healthy dose of cholesterol and satisfy your savory cravings without the carb overload. These salty crunchy parmesan crisps have all of the flavor of an everything bagel and can be used as a snack, broken up as a crouton for salads or soups or to sop up egg yolks!
INGREDIENTS
1 teaspoon poppy seeds
1 teaspoons sesame seeds
1 teaspoons minced dried garlic
1 teaspoons minced dried onion
1/4 teaspoon coarse sea salt
1 cup thinly shredded Parmesan cheese
DIRECTIONS
Preheat oven to 350 degrees. Combine all seeds and dried spices along with the salt in a small bowl. Mix with the shredded parmesan cheese. Scoop one tablespoon onto a parchment paper-lined cookie sheet. Scoop mounds into 3 4-column rows and flatten each mound with the back of a spoon. Ensure Parmesan formations are not touching. Bake on the middle rack for 7-10 minutes until golden brown. Store in airtight container.
*Note: Shred the Parmesan yourself with a grater or shredder to avoid the anti-caking additives in pre-shredded store bought cheeses.
Makes 4 servings, about 2-3 crisps each
