FOOD-AS-MEDICINE RECIPE: GINGER PECAN ENERGY CRUMBLE!
Burnt out on almonds? Pecans, the star of this recipe contain epigallocatechin 38 gallate,better known as EGCG, the primary flavanol found in green tea. An extensive amount of studies have shown EGCG to be effective in stunting cancer cell growth and promoting healthy fat metabolism, which could help those trying to shed the pounds!
GINGER PECAN ENERGY CRUMBLE
INGREDIENTS:
1 ½ cups raw pecan halves
1 cup pitted dates (about 12)
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cardamom
DIRECTIONS:
Place pecans into a food processor bowl fitted with an ‘s’ blade. Pulse until nuts are finely ground. Add the dates and spices. Process until mixture is uniform (may crumble to touch but will stick together when rolled). Transfer mixture into a 8X8 baking dish and press flat. Refrigerate for 4-5 hours, cut into 12 squares. Enjoy on-top of 6oz Greek yogurt.
