GRAINLESS CHOCOLATE SUNBUTTER COOKIES
FOOD AS MEDICINE:
The main ingredients of traditional cookies are enriched wheat flour and sugar, which are pro-inflammatory, leading to abnormalglucose and fat metabolism. These cookies embrace the anti-inflammatory properties of sunflower and chia seeds, coconut and raw cocoa powder to create an indulgence that is anti-inflammatory, nutritious and delicious!
INGREDIENTS:
(Serves 18-20)
1 Tbsp chia seeds
3 Tbsp filtered water
1 cup organic sunbutter (no sugar added)
2 Tbsp unrefined, coconut oil
2 Tbsp grade B pure maple syrup
1 teaspoon vanilla extract
¼ cup raw cocoa powder
½ tsp baking soda
¼ tsp sea salt
DIRECTIONS:
Preheat oven to 350°F. Combine chia seeds and water in a small mixing bowl, let set for a few minutes to gelatinize. Add all other wet ingredients to chia and vigorously combine. In a separate small bowl, combine all dry ingredients, then slowly add to wet batter. Roll into 18, 1” balls and place on a cookie sheet. With a fork, ‘squish’ in a criss-cross
pattern and place in oven. Bake 15-18 minutes
