Gingerbread No Bake Cookie Balls

These nut balls incorporate everything you love about gingerbread into a no-bake and grain-free option that is easy to make (and totally detox friendly for those of us on a 10 Day Detox right now!) These are a fun option to bring to a holiday cookie exchange or to enjoy as a holiday sweet treat post-meal. The pecans and cashew butter make these a fat-dominant snack and balance out the sweetness of the dates which add an extra punch of potassium, magnesium and zinc. The touch of molasses is totally optional but does provide more of a nostalgic gingerbread vibe!
INGREDIENTS
2.5 cups pecans
1 cup dates, pitted
2 Tbsp cashew butter
1 Tbsp molasses (optional)
1 tsp cinnamon
2 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp ground cloves
2 scoops collagen (we like Further Food)
1 tsp vanilla extract
1/4 tsp sea salt
DIRECTIONS
Place the pecans in the food processor fitted with an ‘S’ blade and grind into a coarse nut flour. Add the dates and cashew butter along with the molasses if using. Pulse to chop the dates into smaller pieces, then run until incorporated. Add the cinnamon, ginger, nutmeg, cloves, vanilla and sea salt and continue to process until a ball starts to form and ingredients and uniformly incorporated. You should still see small pieces of pecans in the mixture. Roll into balls and dust with extra ground cinnamon and ginger. Store in the fridge or freezer and pop 1-2 as a snack or treat.
Makes about 12 servings of 2 balls each
