Gluten Free Veggie Spring Rolls Recipe
GLUTEN FREE VEGGIE SPRING ROLLS RECIPE
FOOD AS MEDICINE:
These spring rolls are a wheat free snack or meal that is surprisingly low in carbohydrates! Full of fresh herbs and vegetables, these rolls can help detoxify the system and are full of antioxidants to protect you from oxidative damage on a cellular level. Feel free to add chicken or shrimp for protein or avocado for additional healthy fats!
INGREDIENTS:
Rolls
8 rice wrappers
1 1/3 tablespoons chopped fresh Thai basil
3 tablespoons chopped fresh mint leaves
3 tablespoons chopped fresh cilantro
½ cup spinach leaves
1 cucumber julienned
1 carrot julienned
1/4 head cabbage, shredded
Sauce
2 Tbsp tamari
1 Tbsp rice vinegar
1 Tbsp lime juice
1 clove garlic diced
1 tsp hot pepper sesame oil
1 tsp grade B maple syrup
chili flakes, to taste
DIRECTIONS:
Rolls
Fill a large bowl with warm water. Dip one wrapper into the hot water for 5 seconds to soften. Lay wrapper flat. In a row across the center, place basil, mint, cilantro spinach, cucumber, carrots, cabbageleaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the spinach. Repeat with remaining ingredients per wrapper and when rolled and set, slice into halves to serve with dipping sauce.
Sauce
Whisk ingredients. Serve each Spring Roll with 1 Tbsp sauce. Enjoy!
