Green Eggs and Ham Recipe
GREEN EGGS AND HAM RECIPE
No, we’re not talking the Dr. Seuss book, but we were inspired by it! Since breakfast is one of the most important meals of the day and is often overlooked, we wanted to take the time to inspire you to stop skipping breakfast! Whether it’s lack of time or a dislike for morning meals, we’re determined to encourage you to eat breakfast regularly.
FOOD AS MEDICINE:
We’re spotlighting one of our favorite breakfast recipes, Green Eggs and Ham! The green comes from spinach and basil. Spinach has plant-based compounds that fight inflammation and cancer – particularly effective against prostate tumors. Epoxyxanthophylls are the main cancer-fighting components found in spinach. Eating spinach can also improve your nervous system and eye health. What better way to incorporate spinach than in your morning meal?
Serves 2
INGREDIENTS:
6 pasture-raised heritage eggs
1.5 cups of spinach
4-6 large fresh basil leaves
4 slices of nitrate-free, organic lean ham, chicken sausage or sautéed veggies
DIRECTIONS:
Blend the eggs, spinach, and basil together until smooth and green. Grease a skillet with butter and pour the egg mixture into the pan. Cook slowly over medium heat. Using a rubber spatula, pull the edges of the eggs towards the middle. Repeat until the eggs are cooked to your liking. Season with salt and pepper if desired. Using the same skillet, lay ham in one layer. Let the ham brown for about 1 minute and flip it. Repeat until ham is warmed and brown.
