Grilled Peaches with Fresh Whipped Cream

Ripe juicy peaches and fresh whipped cream are a super easy summer treat that can easily satisfy a crowd at your next dinner party or cookout. I love that this recipe doesn’t require time slaving over a hot stove in the dead of summer and if already grilling proteins and veggies can be accomplished in a matter of minutes! The whipped cream can be made several hours to a day prior and we provide the option to sweeten if desired, but to be honest with the flavor of the grilled peaches this is not necessary. You could also opt to serve with local honey for guests to drizzle if desired but leave the batch of whipped cream unsweetened. If dairy free, the cream can be replaced with full fat coconut cream.
INGREDIENTS
4 ripe peaches, cut in half and pitted
ghee or avocado oil, for grilling
1/2 cup heavy whipping cream
1 tsp vanilla extract
1-2 tsp honey, optional
Fresh mint leaves, for garnish
DIRECTIONS
Place the heavy cream, vanilla and honey if using in the bowl of an electric mixer. The colder the cream the better. Whip on medium high until soft peaks form, about 4-5 minutes. Chill the whipped cream until ready to use. Light a grill (a grill pan or broiler can work here too!) to medium high. Brush the peaches with a very light layer of the ghee or avocado oil just to prevent sticking. Grill peaches facedown about 5-7 minutes until they are warmed through and softened. Flip over and serve warm with the whipped cream and fresh mint.
Makes 4 servings of 1 peach and 2 Tbsp whipped cream each
