Sweet potatoes also aid in decreasing inflammation and help those with Type 2 Diabetes. Rich in beta-carotene and a great source of vitamins C and B6, manganese, copper, potassium, dietary fiber, and iron, sweet potatoes are a versatile vegetable. You can find sweet potatoes in about 400 varieties and two main hues: either cream or orange-colored flesh.
The anthocyanin compounds in sweet potatoes have anti-inflammatory effects and can aid in brain and blood vessel health. Sweet potatoes also help in the release of adiponectin, a hormone found in fat cells that works with insulin response to balance blood sugar levels.

INGREDIENTS:
3 large sweet potatoes
Sprinkle of sea salt
Sprinkle of chipotle seasoning
Coconut oil, butter, or grapeseed oil
DIRECTIONS:
Preheat oven to 350 degrees. Thinly slice the potatoes. Toss the slices with oil and seasoning. Bake for 20-30 minutes, turning once.
