HOMEMADE CASHEW NUT MILK RECIPE

Soaking cashews prior to using them for eating and cooking purposes has many benefits! Soaked nuts are more readily absorbed, more easily broken down, have less potential irritants, and have a better flavor and texture. Soaking nuts and seeds helps remove enzymes called phytates that hinder vitamin and mineral absorption. Inadequate absorption may lead to nutritional deficiencies in essential minerals. Cashews are a source of copper, phosphorous, manganese, magnesium, and zinc!
INGREDIENTS:
2 cups raw cashews
3 medjool dates, pitted
7 cups filtered water
DIRECTIONS:
Soak cashews in 2 cups filtered water for 4 hours. Strain cashews. Add soaked nuts to Vitamix or blender along with 3 pitted dates and 5 cups filtered water. Blend. Optional: you can strain nut milk for thinner consistency in a nut milk bag or fine strainer.
