Macadamia nuts are an amazing keto treat–in fact we often eat them straight out of the bag frozen for a rich, creamy, fat-fueled snack! Macadamia nuts are packed with vitamin A, B vitamins, iron, manganese and folate. They are a great source of heart healthy monounsaturated fatty acids that also support satiety, cell membrane health and brain function. In a study by the Pennsylvania State University Department of Nutritional Sciences, subjects were given macadamia nuts and compared to those who were fed a Standard American Diet. Over the course of the the study, those consuming macadamia nuts saw reduced cholesterol levels and overall healthier heart markers vs those on the SAD diet!

INGREDIENTS
2 cups macadamia nuts
4 eggs
¼ cup almond flour
2 Tbsp ground flax seed
¼ cup ghee, softened
½ cup coconut butter, softened
1 tsp sea salt
½ tsp baking powder
2 Tbsp apple cider vinegar
DIRECTIONS
Preheat the oven to 350F. Grease an 8X4 loaf pan with ghee. Place the macadamia nuts in a food processor with S-blade and process until a nut flour is formed. With the motor running, add the eggs one at a time and continue to process until mixture is smooth. Add the almond flour, flax seed, ghee, coconut butter, sea salt, baking powder and vinegar. Process until combined. Pour the batter into the prepared pan. Bake 35-40 minutes until golden brown and a knife inserted in middle comes out clean. Allow to cool, then slice into 16 slices.

What can I substitute for almond flour? Can’t wait to try this!
Can substitute hazelnut flour
Any recommendation on where to get good quality macadamia nuts (Houston/Katy area)? I don’t like buying nuts out of bins!
Costco has them! And otherwise check out nuts.com
I’ve heard from other Keto experts that flax and chia are off limits because of their potential to mess with hormones. I see that they are in some of your recipes. What is your take on them?
