Keto Peanut Butter Fudge
KETO PEANUT BUTTER FUDGE
FOOD AS MEDICINE:
This easy keto fudge has the nostalgia of a dessert while still maintaining the high fat, low carb ketogenic lifesyle. All of our keto friendly indulgences will be devoid of non-caloric sweeteners as these create a false expectation of sweet. Even natural non-caloric sweeteners like stevia and erythritol can drive insulin resistance and gut dysbiosis. After a few weeks on a ketogenic approach, even peanut butter, coconut and vanilla will taste remarkably sweet as your palate shifts to channel more savory flavors! Note: this recipe is not to be used during intermittent fasting as it does contain some carbs and protein.
INGREDIENTS:
1 cup creamy peanut butter (we recommend grind your own!)
1/2 cup coconut oil
4 oz full fat organic cream cheese
1 tsp vanilla extract
pinch sea salt
DIRECTIONS:
Blend all ingredients in food processor or Vitamix until combined. Pour into an 8×8 pan lined with parchment paper and freeze until solid. Allow to soften slightly before cutting into 1/2 inch squares.
Enjoy one square as at treat for sweet tooth cravings during ketosis, please note this cannot be used for intermittent fasting as it does contain carbs and protein!

Can you make this with fresh ground almond butter instead of peanut butter if you’re avoiding lectins ?

If I want to make it dairy free could I use kite hill cream cheese?
