Lemon Shortbread CBD Ballz
LEMON SHORTBREAD CBD BALLZ
FOOD AS MEDICINE
INGREDIENTS
1 cup raw cashews
1 cup macadamia nuts
½ cup medjool dates
1/4 cup coconut oil
juice and zest of one lemon
1 tsp vanilla bean powder
½ tsp sea salt
12 mL Lemon Ginger Social CBD oil (1/2 mL per ball), use dropper inside bottle to measure or about 2.5 tsp
1 cup almond flour
½ cup coconut shreds
DIRECTIONS
Place the cashews and macadamia nuts in a food processor and process until the mixture resembles coarse crumbs. Add in the dates and pulse until distributed. Add the coconut oil, lemon zest and juice, sea salt and CBD oil and process until smooth. Pulse in the almond flour and coconut shreds a small amount at a time until just blended in–you want to retain some of the texture of the coconut. Keep adding until the mixture firms up. Place in the fridge for 20-30 minutes until able to be scooped with a spoon. Scoop into tablespoon sized mounds and roll between the palms of your hands. Roll in coconut shreds and additional lemon zest if desired. Store in freezer.
