Migas with Spinach and Peppers Recipe
MIGAS WITH SPINACH AND PEPPERS RECIPE

INGREDIENTS:
12 whole large eggs
¼ cup half and half
1 tablespoon grassfed butter
1 tablespoon olive oil
1 medium onion, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 jalapeno, finely diced
½ cup salsa
2-3 cups crushed baked tortilla chips
1 cup Mexican cheese blend, shredded
1 cup cilantro, chopped
1 package baby spinach
2 cups cooked black beans (or 1 can of rinsed black beans)
DIRECTIONS:
In a bowl, whisk eggs and half and half. Set aside. In a large skillet, melt the olive oil and butter over medium-high heat. Add onions and bell peppers and cook until they start to turn brown, for approximately 3-4 minutes. Add in diced jalapeno and stir to combine. Add salsa to the skillet, stir around, and add the chip pieces, stirring to combine. Reduce the heat to low. When the heat has decreased, pour egg mixture into skillet. Stir gently to cook with the peppers. Turn off heat, fold in grated cheese and chopped cilantro. Serve on a bed of baby spinach with ½ cup black beans.
