Nori Salmon Roll Ups

These Nori Salmon Roll Ups are a fun sushi-like delivery of synergistic ingredients that support neurotransmitter balance, brain health and mood and would make a great addition to you or your child’s lunch to aid in concentration and focus throughout the day. Nori provides tyrosine, an amino acid that helps to aid in dopamine production. Dopamine is often depleted under high stress and when low can be a source of cravings or looking to “fill the void” when we mindlessly open the fridge after a long day. WIld caught salmon is a good source of tryptophan which aids in serotonin production, supporting balanced mood, sleep and reducing anxiety and depression. Adding avocado oil mayo and slices of avocado provide a grounding source of brain-boosting fat and aid in reducing blood sugar fluctuations to keep energy stable throughout the day.
INGREDIENTS:
4 sheets nori
1 can wild caught salmon
2 Tbsp avocado oil based mayo
1 stalk of celery, chopped
2 Tbsp diced red onion
½ tsp salt
½ tsp black pepper
1 tsp dried dill
1 avocado, sliced
Note: if bringing for a lunch or not eating right away, dip the avocado slices in lemon juice to prevent browning!
DIRECTIONS:
In a medium bowl, mash the canned salmon with the avocado oil mayo, celery, onion, salt and pepper and dried dill with a fork until salmon is broken up and ingredients are well distributed. Lay a sheet of nori on a flat surface and scoop about 1/4 of the salmon mixture over the nori and spread with the back of a spoon over the bottom 3/4 of nori sheet. Layer with 1/4 of the sliced avocado. Roll up horizontally and if needed seal the edge by dipping fingers in a bit of water. Slice and serve.
