Peach and Goat Cheese Tart Recipe
PEACH AND GOAT CHEESE TART RECIPE
FOOD AS MEDICINE:
Stone fruits like peaches, plums and nectarines have been shown to ward off obesity-related diseases such as diabetes, metabolic syndrome and cardiovascular disease. They also have bioactive and phenolic compounds including quercetin and anthocyanins with anti-obesity and anti-inflammatory properties and their soluble fiber helps to reduce LDL cholesterol. The combination of goat cheese and Greek Yogurt makes for a protein-rich, tangy tart filling that is loaded with protein as well as beneficial K2, which helps to prevent calcification of the arteries and decreases the risk of cardiovascular disease and osteoporosis.
Makes 8 servings
INGREDIENTS:
For the crust:
1 cup almond flour
1 cup hazelnut flour
2 Tbsp grassfed butter
1 egg
pinch sea salt
For the filling:
4 ounces goat cheese
½ cup Greek Yogurt
1 egg
¼ cup raw local honey
1 tsp vanilla extract
For the topping:
3-4 ripe peaches
juice of 1 lemon
raw local honey
DIRECTIONS:
Preheat the oven to 350F. Combine all of the crust ingredients in the food processor until dough begins to form a ball. Press the dough into an 8-inch pie pan greased with grassfed butter. Bake for 8-12 minutes, until lightly browned. Keep a close eye on the crust, as you will bake again with the filling and do not want it to get too dark! Remove from the oven and allow to cool completely.
In the meantime, make the filling. Process the filling ingredients in the food processor until smooth. Pour the filling into the cooled crust. Place on a baking sheet surrounded by one inch of water. This will keep the filling from cracking while it bakes. Bake 20-25 minutes, until the filling it set and no longer jiggly in the center. Allow to cool completely. While the tart bakes, slice the peaches thinly and sprinkle with the lemon juice. When ready to assemble, overlap the peaches starting from the outside of the tart and working inwards in concentric circles. Top with a drizzle of raw honey and optional blueberries, blackberries or raspberries.
