This pate is one of the best ways to get liver into someone squeamish! The cinnamon paired with the subtle sweetness of apple and creaminess of coconut and peanut butter creates a dairy-free pate that can be eaten on its own, spread on grain-free crackers, or sneaked into smoothies (my approach for miss Stella). Liver is a nutritional super food providing a rich source of choline, folate, zinc, iron, and many other trace minerals and B-vitamins. The nutrients in liver are in their most bioavailable form with no anti-nutrients blocking their absorption which is commonly seen with vegetables. Adding a healthy amount of fats to this recipe not only supports the creaminess but it enhances absorption of vitamins A, D, E and K. Choose organic or pasture-raised livers to ensure nutrients are provided without concern of toxins as liver is the primary detox gland, it is important to nourish with a clean source!
INGREDIENTS
1/3 cup coconut oil, separated
1 yellow onion, chopped
1/2 tsp sea salt
Bell Evans organic chicken livers 16oz, rinsed in cold water and patted dry
1/2 gala apple
1/2 tsp cinnamon
1/3 cup coconut milk
1/3 cup peanut butter
DIRECTIONS
Makes about 12 servings of 1/4 cup each

Hi, I made this but left the apple out for keto version. It was very good, but a little dry…I am guessing the apple would add moisture. Is it necessary to leave the apple out for a keto version? Thank you!
No it is only 1/2 an apple divided into multiple servings so you would be fine.
