Pico De Gallo
HEIRLOOM TOMATO PICO DE GALLO
FOOD AS MEDICINE:
Tomatoes are jam-packed with vitamins A, B, C, and K. They also contain high levels of potassium and chromium, which aid in stabilizing blood sugar and ward off those pesky sugar cravings. Tomatoes can be eaten in a variety of ways, both raw and cooked. Eating them both ways provides for the best balance of nutrients as cooked tomatoes will be richer in the antioxidant lycopene while raw tomatoes will be a better source of Vitamin C.
INGREDIENTS:
2 large heirloom tomatoes, diced
½ red or white onion, diced
2 cloves garlic, minced
1 jalapeno, minced
½ cup cilantro, coarsely chopped
juice of 1 lime
pinch sea salt
DIRECTIONS:
- Combine the diced tomatoes, onion, garlic and jalapeno. Fold in the cilantro leaves.
- Add the lime juice and toss to coat all ingredients in the juice. Season to taste with the sea salt. Serve with our Naturally Nourished Taco Salad, breakfast tacos, Slow Cooker Carnitas and more!
