QUICK ONION SOUP RECIPE
INGREDIENTS:
1-2 cups Caramelized onions (see above)
1 Tbsp arrowroot
3 cups of bone broth (chicken or beef)
1/2 cup white wine (or more broth)
sea salt, black pepper to taste
Grated Parmesan or Gruyere cheese
DIRECTIONS:
At the end of the caramelized onion process, stir in arrowroot allowing it to mix in with moisture of onions. Then add broth, wine, salt/pepper to taste. Allow to simmer for at least 15 minutes. Top with grated cheese.
