Roasted Cauliflower Hummus
ROASTED CAULIFLOWER “HUMMUS”
FOOD AS MEDICINE:
Cauliflower is low in calories and carbohydrates and is nutrient dense, making it a great base for soups, purees, and mashes. Cauliflower contains powerful sulfur compounds that have the ability to protect against cancer and detoxify the body. This vegetable also has high amounts of vitamins C and K, folate, choline, and fiber. For added nutritional value, combine bone broth and cauliflower. The combination helps repair the gut lining, reduce toxic compounds in the bloodstream, and support the detox process.
INGREDIENTS:
1 head cauliflower, broken into florets (about 3-4 cups)
1 Tbsp avocado oil or ghee
1 teaspoon sea salt, divided
3 cloves garlic
3 Tbsp Tahini
juice of 1 lemon
¼ cup olive oil
¼ cup water, as needed
smoked paprika for serving
DIRECTIONS:
Preheat the oven to 400 degrees. Coat the cauliflower florets with the avocado oil or ghee and sprinkle with the ½ teaspoon of the sea salt. Roast about 25 minutes, tossing once, until the edges begin to brown and crisp up. Allow to cool about 10 minutes.
Put the cauliflower mixture into the Vitamix. Add the garlic, tahini, lemon juice and the rest of the sea salt. Blend until smooth.
With the blade running, drizzle in the olive oil in a steady stream. Add the water 1 tablespoon at a time if needed to achieve desired consistency.
Taste and adjust seasoning as needed. Serve with non-starchy vegetables of your choice and a dash of smoked paprika.
