SAVORY SWEET ROASTED PEPITAS
This snack is a great blend of salty, crunchy, savory, and sweet! Pumpkin seeds or pepitas are rich in zinc which boosts immune system response and B-vitamins which aid in stress resilience, energy, and metabolism. Pepitas are a great blend of fat, protein, and fiber that can be consumed on their own or paired with a fruit or raw aged cheese cubes! I made this recipe with Melissa Wilson on Fox 26 Houston with a segment focusing on healthy ways to work pumpkin into your diet!
INGREDIENTS:
2 cups raw pumpkin seeds (Pepitas)
3 Tbsp Grade B Maple Syrup
1/2 tsp sea salt
1/4 tsp nutmeg
1/4 tsp cloves ground
1/4 tsp ginger
1 tsp cinnamon
cracked black pepper, to taste
coarse sea salt, to taste
DIRECTIONS:
Combine maple syrup through black pepper to taste in a bowl. Stir in pumpkin seeds to coat evenly with mixture and spread on baking sheet lined with parchment paper. Sprinkle with coarse sea salt and roast in preheated oven at 325 for 12-15 minutes. Then turn off oven and leave in until slightly browned.
