SIMPLE CAPRESE SALAD RECIPE

This simple Caprese salad recipe comes together in a matter of minutes! Caprese salad is a classic, perfect for any dinner party or afternoon snack. Tomatoes are jam-packed with vitamins A, B, C, and K. They also contain high levels of potassium and chromium, which aid in stabilizing blood sugar and ward off those pesky sugar cravings. Tomatoes can be eaten in a variety of ways, both raw and cooked. Eating them both ways provides for the best balance of nutrients. Purchase grassfed mozzarella, which contains K2 to decalcify arteries and decrease the risk of both cardiovascular disease and osteoporosis. Besides being packed with flavor, basil provides a nice antioxidant punch and is a natural aphrodisiac. For a balanced meal, serve with 4-6 ounces of protein.
Makes 4 servings
INGREDIENTS:
2 large heirloom tomatoes
4 oz fresh grassfed mozzarella
3 tablespoons fresh basil, cut into thin ribbons
Drizzle balsamic vinegar
Drizzle olive oil
Pinch sea salt
DIRECTIONS:
Slice tomatoes and mozzarella into ¼-inch thick slices. Stack 3 slices of tomato with 2 slices of mozzarella in between. Drizzle with balsamic vinegar and olive oil. Sprinkle with sea salt. Top with basil.
