Strawberry Collagen Lemonade
FOOD AS MEDICINE:
We love adding collagen anywhere and everywhere to ramp up protein in a dish or beverage and provide support for hair, skin, nails, joints and beyond. Collagen is literally the glue that holds our bodies together and boasts an impressive array of research on its benefits including vascular health, treatment of pressure ulcers as well as maintenance of gut lining integrity. In fact, we dedicated a whole podcast to the benefits of collagen a couple of weeks ago and ever since have been doubling down on it in coffee, tea, shakes and more. This Strawberry Collagen Lemonade is a refreshing summer treat that can be left fully unsweetened or modified with the addition of raw local honey. It would also play well with a shot of tequila, just sayin! The strawberries and lemon provide a beneficial dose of Vitamin C which plays a major role in collagen synthesis, ramping up this beverage’s therapeutic potential! And don’t worry, if you use collagen from our friends at Further Food like we did here you will definitely not taste it!
INGREDIENTS:
4 scoops Further Food collagen
1-2 Tbsp raw local honey, optional
1/2 cup hot water
1 cup strawberries, halved
Juice of 6 lemons (around 2/3 cup juice)
6 cups cold filtered water
DIRECTIONS:
Combine the collagen, honey (if using) and hot water and whisk with a fork until dissolved. Place the strawberries in a large mason jar or pitcher and muddle with a muddler (or a fork) until juices begin to release. Add the collagen hot water combination and lemon juice and stir until evenly distributed. Stir in the cold water. Serve over ice. Option to at 1.5 oz blanco tequila for a strawberry lemonade margarita!
