Eggs are incredibly nutrient dense, providing 7 grams of protein each plus choline for cognitive function and omega 3’s for heart health! Eggs are also a rich source of sulfur-containing amino acids that support the detox process as well as Vitamin D to support optimal immune function. Always choose pasture raised eggs and make sure you eat that beautiful yolk as this is where the nutrients are most concentrated! Soft boiled eggs are a quick and easy breakfast or an amazing addition to elevate things like salads and soups to the next level!
INGREDIENTS
2 eggs
salt + pepper to taste
DIRECTIONS
Start with eggs at room temperature by sitting them out on the counter for 20 minutes or so. You can also place in a bowl of warm water to bring to temperature if in a hurry. Fill a small saucepan with water and bring to a boil–you want it about 2/3 full or high enough to fully cover the eggs. Once boiling, carefully add the eggs and boil 5 minutes.
In the meantime, prepare an ice bath by filling a small bowl with ice and cold water. After 5 minutes, carefully move the eggs to the ice bath and allow to cool 2-3 minutes.
Remove the eggs and peel them. Sprinkle with salt and pepper and enjoy!
Note: the 5 minute method will achieve a very runny yolk. If you desire a more firm yolk, refer to the guide below for how long to cook!
