TWICE BAKED CAULIFLOWER MASH

Cauliflower is a great low-carb vehicle for flavor taking on any combination of savory seasonings. Beyond being low carb and low calorie, cauliflower contains powerful sulfur compounds that have the ability to protect against cancer and detoxify the body. This vegetable also has high amounts of vitamins C and K, folate, choline, and fiber which can support weight loss and optimize metabolism!
I made this recipe ad-lib for Brady’s birthday. I was tight into ketosis and didn’t want to miss out on celebrations. He requested grassfed steak and twice baked potatoes.
I made this little dish to stay keto strong while support his request. He LOVED it! Actually, he said it was his favorite thing on the plate and that stands up to a 40-day dry aged ribeye. I hope you all enjoy this indulgent way to channel nostalgic flavors while staying strong with a high-fat low-carb diet.
INGREDIENTS:
1 head of cauliflower, chopped into 1-2″ pieces
1/8 cup bone broth (I used my homemade chicken broth), warmed
4oz full fat cream cheese, softened
1/4 cup fine parmesan cheese, separated
2 Tbsp scallion root, chopped white part
1/2 tsp sea salt
1/2 tsp dried garlic
1/2 tsp ground black pepper
3 Tbsp scallion tops, chopped
DIRECTIONS:
Preheat the oven to 375 degrees F. Steam cauliflower until tender. Add steamed cauliflower with warmed bone broth run through blender to puree. Remove cauliflower puree from blender and in a bowl combine softened cream cheese, 1/8 cup of the parmesan, scallion root, salt, garlic granules, black pepper. Then place this mixture into a baking dish and top with remaining parmesan and scallion tops. Bake for 20-min. Then set oven to broil and move pan to 2″ or so from broiler. Keep dish under broil setting to get a nice browned top, about 3-5 minutes based on your setting.
Hi!! Trying to figure out when to add the bone broth. And I think there might be a step missing after puréeing the cauliflower incorporate to the cheese mixture. Just curious, I made it without the bone broth and its really yummy but might need the extra protein maybe?
